How French Roast Is Made
Coffee starts as a green bean. During roasting, heat causes the bean to expand, change color, and develop flavor. French roast takes that process further than most. The beans are roasted to around 464 degrees Fahrenheit, well past where most dark roasts stop.
At that point, the original characteristics of the bean, where it was grown, its natural fruit or floral notes, largely disappear. What you taste instead is the roast itself. That is what defines French roast.
